Pan-Fried Sweet Potatoes With Canadian Bacon
- 3 medium size sweet potatoes (about 2 lb.)
- 1 large onion
- salad oil
- 1 (8 oz.) can pitted prunes
- 1/2 c. maple flavor syrup
- 1/2 tsp. ground cinnamon
- 1 lb. Canadian-style bacon, sliced 1/4-inch thick
- About 45 minutes before serving, peel and cut sweet potatoes into 3/4-inch thick slices. Dice onion.
- In a 12-inch skillet over medium heat in 1 tablespoon hot salad oil, cook onion until tender; remove to large bowl. In the same skillet over medium heat, in 3 tablespoons hot salad oil, cook sweet potatoes until golden brown on one side.
- Reduce heat to low.
- Cover and cook 5 minutes. With pancake turner, turn potatoes.
- Cook over medium heat until browned on the other side. Reduce heat to low. Cover and cook 5 to 10 minutes longer until potatoes are tender.
- Remove sweet potatoes to bowl with onion.
