Italian Heritage Casserole
- 6 potatoes, peeled and quartered
- 1 green pepper, cut in lengthwise strips
- 1 tsp. oregano
- 1 tsp. paprika
- 1/2 tsp. salt
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 1 (3 lb.) frying chicken, skinned and cut in pieces or 6 chicken breast halves, cut in chunks
- 1 lb. sweet or mild Italian sausage, cut in 1 to 2-inch chunks
- Spray 13 x 9 x 2-inch baking dish; arrange potatoes and pepper in bottom of dish.
- Combine the seasonings; sprinkle a third of the seasoning mixture over vegetables.
- Layer chicken pieces and sausage over vegetables.
- Sprinkle remaining seasoning mixture on top.
- Cover tightly with foil.
- Bake at 425u0b0 for 30 minutes. Reduce oven temperature to 375u0b0 and bake for 30 to 40 minutes more.
- Yields 6 servings.
