Franks-N-Ramen
- 1 lb. frankfurters, cut in half diagonally
- 1/2 c. onion, chopped
- 1/2 tsp. basil leaves; fresh, crushed and chopped
- 2 Tbsp. butter or margarine
- 10 3/4 oz. cream of celery or cream of mushroom soup
- 1/2 c. milk
- 1/2 c. tomatoes, chopped (or canned)
- 2 pkg. (any flavor) Ramen noodles, cooked (al dente) and drained, do not use spice packet
- 1 Tbsp. parsley, chopped fine
- 1/2 c. mozzarella cheese, shredded
- salt and pepper to taste
- 1 tsp. Tabasco sauce (optional to add a little kick)
- In an ovenproof skillet, brown frankfurters in butter.
- Add onion and basil, cook until tender.
- Preheat broiler.
- Stir in soup, milk, tomatoes, noodles, parsley, salt and pepper; Tabasco if desired.
- Heat, stirring occasionally for 4 minutes.
- Sprinkle cheese on top and place on top rack of oven. Bake until cheese just turns brown, about 4 minutes.
- Remove and serve.
