Spaghetti With Fresh Tomato Sauce
- 2 Tbsp. olive oil
- 10 plum tomatoes, coarsely chopped
- 2 cloves garlic, finely chopped
- 2 lb. spaghetti
- salt and fresh ground black pepper to taste
- 1 1/2 c. pasta cooking water
- 1/2 c. chopped fresh basil
- 1 c. grated fresh Parmesan cheese
- In a large saute pan, heat the oil until hot.
- Add the tomatoes and saute over low heat for 5 minutes.
- Add garlic and cook 30 seconds more.
- In a large pot, bring water to boil.
- Add pasta and 1 tablespoon of salt.
- Cook pasta until tender, but still has some bite.
- Remove 1 1/2 cups of the pasta cooking water and pour it over the tomatoes.
- Drain pasta and transfer to a large bowl.
- Bring tomato mixture to a boil.
- Add the pasta, basil, salt and pepper; toss thoroughly and serve at once.
- Pass the cheese separately.
