Ratatouille
- 1 onion, thinly sliced
- 1/4 c. olive oil
- 3 zucchini (1/8 inch slices)
- 4 medium tomatoes, peeled and chopped
- 2 medium sweet red peppers, chopped (green peppers are okay)
- 1 large eggplant, peeled and diced
- 1 clove garlic, finely chopped
- 1/2 tsp. sugar
- 1/4 tsp. white pepper
- 1/8 tsp. dry mustard
- 1 tsp. lemon juice
- 1/4 c. chopped parsley
- Cook and stir onion slices in oil until tender.
- Stir in remaining ingredients except parsley.
- Reduce heat; cover and simmer 3 minutes.
- Uncover and cook over medium heat, stirring constantly until liquid is evaporated.
- Watch carefully; turn into serving dish and sprinkle with parsley.
- Makes 6 servings, 130 calories per serving.
