Ratatouille

  1. Cook and stir onion slices in oil until tender.
  2. Stir in remaining ingredients except parsley.
  3. Reduce heat; cover and simmer 3 minutes.
  4. Uncover and cook over medium heat, stirring constantly until liquid is evaporated.
  5. Watch carefully; turn into serving dish and sprinkle with parsley.
  6. Makes 6 servings, 130 calories per serving.
