Simple Oatmeal Cookies Or Cowboy Cookies
- Simple Oatmeal Cookies
- 1 1/2 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 egg, slightly beaten
- 1 cup sugar
- 1/2 cup shortening, melted (can use butter)
- 1 tablespoon molasses
- 1/4 cup milk
- 1 3/4 cups oatmeal, uncooked
- 1/2 cup raisins
- For Cowboy Cookies (add in)
- 3/4 cup sweetened coconut, flaked (reduce oatmeal by 1/4 cup) or 3/4 cup sweetened coconut, shredded (reduce oatmeal by 1/4 cup)
- 1/2 cup chocolate chips
- Preheat oven to 350u0b0.
- To make Simple Oatmeal Cookies: Mix the flour, baking soda, cinnamon and salt together in a large bowl.
- Stir in the remaining ingredients.
- Arrange by teaspoonfuls on unbuttered cookie sheets. Leave about 1 inch in between. They do spread a wee bit. Not too much though.
- Bake until the edges are brown, about 10-12 minutes.
- For Cowboy Cookies: Add in coconut and chocolate chips when you add in the rest of the ingredients (Step 3). Drop them by the FULL tablespoon on a cookie sheet. (Might have to "squish" them a bit) Bake for 14-17 minutes or until mostly brown.
