Cajun Hamburger Soup
- 1 lb lean ground beef
- 1 medium onion, chopped
- 2 quarts water
- 1 (28 ounce) can diced tomatoes, undrained
- 3 cups shredded cabbage
- 3 cups potatoes, peeled & diced
- 1 (15 ounce) can great northern beans, drained
- 1 (15 ounce) can Italian tomato soup
- 1 (4 ounce) can sliced mushrooms, undrained
- 1 cup sliced carrot
- 1 cup chopped green pepper
- 1 cup chopped celery
- 3 chicken bouillon cubes
- 2 tablespoons chopped fresh parsley
- 2 teaspoons cajun seasoning
- 1 teaspoon chili powder
- 1 teaspoon red pepper flakes
- 1 teaspoon black pepper
- 1 bay leaf
- In a large soup kettle, cook beef & onion over medium heat until beef is browned.
- Drain.
- Add remaining ingredients & bring to a boil.
- Reduce heat & simmer, covered, for 1 hour, or until vegetables are tender.
- Discard bay leaf before serving.
