Pineapple Date Nut Loaf
- 1/4 c. butter
- 1/2 c. sugar
- 1 egg
- 1/4 tsp. lemon extract
- 1 (8 1/2 oz.) can crushed pineapple
- 1/4 c. chopped nuts
- 2 1/2 c. sifted all-purpose flour
- 2 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 1 tsp. salt
- 1/2 c. finely chopped pitted dates
- 1/4 c. water
- 1/4 c. chopped maraschino cherries, well drained
- Cream butter and sugar.
- Add egg and lemon extract.
- Drain pineapple, reserving liquid.
- Add crushed pineapple and nuts to creamed mixture.
- Sift dry ingredients together.
- Add dates and mix well, separating date pieces.
- Stir dry ingredients into creamed mixture, alternating with reserved pineapple juice plus 1/4 cup water.
- Fold in cherries.
- Bake at 375u0b0 about 55 minutes.
