Pineapple Date Nut Loaf

  1. Cream butter and sugar.
  2. Add egg and lemon extract.
  3. Drain pineapple, reserving liquid.
  4. Add crushed pineapple and nuts to creamed mixture.
  5. Sift dry ingredients together.
  6. Add dates and mix well, separating date pieces.
  7. Stir dry ingredients into creamed mixture, alternating with reserved pineapple juice plus 1/4 cup water.
  8. Fold in cherries.
  9. Bake at 375u0b0 about 55 minutes.
