Oven Swiss Steak

  1. Cut meat in 4 portions.
  2. Combine flour and salt and pound into meat.
  3. Save remaining flour.
  4. Brown in hot Crisco (oil).
  5. Transfer to shallow baking dish.
  6. Blend flour into drippings; add carrots, celery, onion, tomatoes and Worcestershire.
  7. Cook until thickened, stirring constantly.
  8. Pour over meat.
  9. Cover and bake at 325u0b0 for 2 to 2 1/2 hours, until tender.
  10. Add broth or water if necessary while cooking.
  11. Sprinkle cheese over meat.
  12. Bake until melted. Makes 4 servings.
