Spinach-Cheese Pie(Spanokopita)
- 2 lb. filo
- 1 c. Feta cheese
- 1 small container cottage cheese
- 1 container regular cottage cheese
- 7 eggs
- 1 tsp. dill
- 1 tsp. mint
- 1 pkg. frozen, chopped spinach, thawed
- 1 Tbsp. cream of rice
- 1/2 lb. margarine, melted
- 1 tsp. salt
- pepper
- 1 bunch green onions, chopped
- Cook chopped onions intuttertntil tender.
- In bowl, beat eggs.
- Add cheeses, dill,
- mint,
- cream of rice, salt and pepper; mix well.
- Drain
- chopped
- spinach well.
- Mix.
- Add to the onion and cheesetixture.
- Spread filo, 3 layers, buttering each layer with
- margarine.
- Cut
- into thirds.
- Each makes one roll.
- Spread spoonful of
- filling on each piece and roll. Tuck ends in as you roll.
- Bake
- at
- 375u0b0 until browned, about 25 minutes.
