Baked Ziti With Vegetables
- 2 Tbsp. olive oil
- 1 medium green and red bell pepper, diced
- 1/4 lb. mushrooms, chopped
- 1 (16 oz.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1/4 c. dry red wine
- 1 tsp. basil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. oregano
- 1 pkg. frozen spinach
- 1/2 c. frozen corn
- 8 oz. ziti, cooked
- 8 oz. Ricotta
- 1/4 c. Parmesan
- Saute peppers in oil for 5 minutes.
- Remove and set aside. Saute onions, garlic and mushrooms for several minutes.
- Break up tomatoes and add to skillet; add tomato sauce, wine, basil, salt, pepper and oregano.
- Bring to boil.
- Simmer 20 minutes.
- Add spinach and corn; cook until spinach wilts.
- Combine ziti, tomato mixture, Ricotta and 2/3 of peppers and spoon into prepared casserole.
- Sprinkle with Parmesan.
- Bake at 375u0b0 for 25 minutes. Garnish with remaining peppers.
