Jambalaya(Low Calorie)
- 4 skinned, boned chicken breasts
- 1/4 tsp. ground red pepper
- 1/4 tsp. ground black pepper
- 1 lb. low-fat smoked turkey sausage
- 2 1/4 c. chopped onion
- 2 c. chopped celery
- 1 1/2 c. sliced green onions
- 1/2 c. chopped green pepper
- 1/2 c. chopped red pepper
- 2 cloves garlic, minced
- 2 1/2 c. water
- 1 tsp. chicken bouillon granules
- 1/2 tsp. browning and seasoning sauce
- 1 1/4 c. long grain rice (uncooked)
- vegetable cooking spray
- Boil chicken until tender and cut into cubes; set aside.
- Coat skillet with cooking spray.
- Add onion and next 5 ingredients; saute until tender.
- In a Dutch oven, add chicken, sauteed ingredients, sliced sausage, ground red and black pepper, water, bouillon, seasoning sauce and rice.
- Bring to a
- boil.
- Cover and reduce heat and simmer 20 minutes or until rice is tender and liquid is absorbed.
- Yield:
- 6 servings.
