Peanut Butter Chocolate Truffles
- 1 pound cake mix
- 3/4 c. melted butter or margarine
- 2 c. crushed graham crackers (about 16 whole)
- 1 1/2 c. peanut butter
- 1 1/2 c. confectioners sugar
- 1/3 c. milk
- 1 (12 oz.) bag semi-sweet chocolate chips, melted (2 c.)
- Prepare pound cake according to mix instructions.
- Pour into a 15 1/2 x 10 1/2 x 1-inch greased cookie sheet.
- Bake at 350u0b0 for 30 minutes.
- Completely cool cake.
- In a large bowl, mix melted margarine, graham cracker crumbs, peanut butter and confectioners sugar until crumbly.
- Add milk, a little at a time, until creamy. Spread evenly over cooled pound cake.
- Melt chocolate chips; spread evenly over peanut butter mixture.
- Let stand at room temperature, until chocolate hardens.
- Cut into bars.
- Freezes well.
