Vegetarian Sweet And Sour Noodles
- 1 white onion (chunked)
- 2 green bell peppers (chunked)
- 2 celery ribs (thinly sliced)
- 20 ounces pineapple chunks, in natural juices no sugar added (1 lg can)
- 24 ounces shirataki noodles (2 packages)
- Sauce
- 1 cup rice vinegar or 1 cup white vinegar
- 1/3 cup Splenda sugar substitute
- 1/4 cup soy sauce
- 3 tablespoons ketchup (you can use tomato paste to avoid the sugar in ketchup)
- 3 tablespoons cornstarch
- In a large skillet saute onion, bell peppers and celery in juice from pineapple chunks until tender. Add pineapple chunks, heat through.
- Prepare Shirataki noodles according to package directions. Add to skillet, heat through.
- Combine all the sauce ingredients in small bowl, whisk thoroughly. Add sauce to skillet, heat until thickened.
