Meatball Pasta Soup
- favorite meatball recipe
- 2 Tbsp. vegetable oil
- 1 medium onion
- 1 carrot, diced
- 1 1/2 c. chopped celery
- 1 clove garlic, minced
- 1 (28 oz.) plum tomatoes
- 1 (6 oz.) tomato paste
- 3 c. water
- 1 tsp. salt
- 1 tsp. basil
- 1/2 tsp. rosemary
- 1/4 tsp. pepper
- 2 bay leaves
- 1/2 c. twist macaroni
- 1 c. chopped spinach
- grated Parmesan cheese
- Make small 1-inch meatballs with your favorite recipe.
- Cook meatballs in Dutch oven.
- Cook vegetables in drippings; add tomatoes, paste and seasonings.
- Add meatballs.
- Bring to boil. Reduce heat to low.
- Cover and simmer 30 minutes.
- Stir in macaroni.
- Cook 10 minutes.
- Stir in spinach.
- Cook 5 minutes. Remove bay leaves.
- Garnish with cheese.
