Pork Tenderloin With Brandy

  1. Cut pork crosswise into six pieces.
  2. Flatten each by covering with waxed paper and mashing with a saucepan bottom, mallet or cleaver until 1/4-inch thick.
  3. Arrange medallions in one layer on bottom of a baking dish.
  4. Sprinkle with salt and pepper.
  5. Cover with waxed paper.
  6. Turning over and rearranging medallions midway, microwave on Medium-high (70%) 4 to 5 minutes; set aside.
  7. Place apples in a two-cup glass measure.
  8. Add margarine and onions. Cover with plastic wrap and microwave on High 3 minutes.
  9. Remove apples with a slotted spoon; add to pork.
  10. Add brandy, water and brown sugar to drippings in glass measure.
  11. Do not cover. Microwave on High 4 minutes, or until sauce is slightly reduced. Arrange pork and apples on serving plates. Spoon sauce over pork.
