Pork Tenderloin With Brandy
- 1 (12 oz.) pork tenderloin
- salt and pepper
- 1 medium apple, cut into 8 wedges
- 1 Tbsp. margarine
- 2 green onions, thinly sliced
- 3 Tbsp. apple juice or brandy
- 1 Tbsp. brown sugar
- Cut pork crosswise into six pieces.
- Flatten each by covering with waxed paper and mashing with a saucepan bottom, mallet or cleaver until 1/4-inch thick.
- Arrange medallions in one layer on bottom of a baking dish.
- Sprinkle with salt and pepper.
- Cover with waxed paper.
- Turning over and rearranging medallions midway, microwave on Medium-high (70%) 4 to 5 minutes; set aside.
- Place apples in a two-cup glass measure.
- Add margarine and onions. Cover with plastic wrap and microwave on High 3 minutes.
- Remove apples with a slotted spoon; add to pork.
- Add brandy, water and brown sugar to drippings in glass measure.
- Do not cover. Microwave on High 4 minutes, or until sauce is slightly reduced. Arrange pork and apples on serving plates. Spoon sauce over pork.
