Michael'S Baked Chicken Rolls And Rice
- 2 chicken breasts (skinless), boned
- 1 onion, chopped
- 1 green pepper, chopped
- 8 slices Swiss cheese
- Italian bread crumbs
- 2 tomatoes
- 1 egg, beaten
- 1/4 c. oil
- Italian dressing
- 1 family-size pkg. rice and seasoning (Italian)
- Cut chicken breasts into fillets (long and thin).
- Marinate fillets in Italian dressing for 1 hour.
- Preheat oven to 350u0b0. Make rice and place in an 8 x 8-inch baking pan.
- Place chicken on flat surface.
- Put chopped vegetables and 2 slices of Swiss cheese on fillets.
- Roll up tightly and pin with toothpick.
- Dip rolls in egg, then in bread crumbs.
- Fry in oil until brown.
- Place on rice.
- top with slice of tomato on each roll.
- Bake for 1/2 hour, until done.
