Low-Fat Fettuccine Alfredo
- 3/4 (16 oz.) pkg. fettuccine or linguine
- salt
- 1 Tbsp. all-purpose flour
- 1/4 tsp. ground black pepper
- 1/4 tsp. ground nutmeg
- 2 c. low-fat milk (1%)
- 1/2 c. grated Parmesan cheese
- 1 Tbsp. chopped parsley
- parsley sprigs for garnish
- About 30 minutes before serving, prepare fettuccine as label directs, using 2 teaspoon salt in water; drain.
- Keep warm.
- In 5 quart saucepot, mix flour, pepper, ground nutmeg and 3/4 teaspoon salt; stir in milk.
- Cook over medium heat, stirring constantly, until mixture boils and thickens slightly.
- Boil 1 minute.
- Remove saucepot from heat.
- Stir in fettuccine, grated Parmesan cheese and chopped parsley.
- Toss to coat well.
- Serve immediately garnished with parsley sprigs.
- Makes 4 main dish servings.
- Each serving contains 420 calories, 6 g fat and 13 mg cholesterol.
