Low-Fat Fettuccine Alfredo

  1. About 30 minutes before serving, prepare fettuccine as label directs, using 2 teaspoon salt in water; drain.
  2. Keep warm.
  3. In 5 quart saucepot, mix flour, pepper, ground nutmeg and 3/4 teaspoon salt; stir in milk.
  4. Cook over medium heat, stirring constantly, until mixture boils and thickens slightly.
  5. Boil 1 minute.
  6. Remove saucepot from heat.
  7. Stir in fettuccine, grated Parmesan cheese and chopped parsley.
  8. Toss to coat well.
  9. Serve immediately garnished with parsley sprigs.
  10. Makes 4 main dish servings.
  11. Each serving contains 420 calories, 6 g fat and 13 mg cholesterol.
