No Bake Confetti Brownies
- 1 c. chopped walnuts or pecans
- 2 c. miniature marshmallows (white or colored)
- 3 c. graham cracker crumbs (about 38 sq.)
- 1 c. confectioners sugar
- 1 (12 oz.) pkg. semi-sweet chocolate pieces
- 1 c. evaporated milk
- 1/2 tsp. peppermint extract
- walnut or pecan halves
- In a bowl, mix together nuts, marshmallows, crumbs and sugar. In a saucepan, melt chocolate in evaporated milk over low heat, stirring until thick and smooth.
- Remove from heat; add peppermint extract.
- Reserve 1/2 cup chocolate mixture for frosting; add remainder to crumb mixture.
- Stir until all crumbs are moistened. Turn into greased 8-inch square pan; press down.
- Spread reserved chocolate mixture over top.
- Chill until ready to serve.
- Cut into 1 x 2-inch pieces.
- Use nut half for garnish.
