Chicken Cacciatore
- 4 chicken breasts
- flour
- 1/4 c. olive oil
- 1 (No. 2) can tomatoes
- 2 cloves garlic, minced
- 1 1/4 tsp. salt
- 1 tsp. Accent
- 1/2 tsp. oregano, crumbled
- 1/2 tsp. basil, crumbled
- 1/4 tsp. pepper
- 1/2 lb. fresh mushrooms, sliced
- 1/4 c. sherry
- chopped fresh parsley
- Dredge chicken in flour; brown in olive oil until golden. Season and place chicken in 2 1/2-quart casserole.
- Add tomatoes to skillet and stir to deglaze pan.
- Add salt, garlic, Accent, oregano, basil and pepper.
- Spread mushrooms over chicken.
- Pour tomato mixture over chicken and mushrooms.
- Cover and bake at 350u0b0 for 1 hour.
- Pour sherry over top.
- Garnish with parsley.
- Serve with Fettucine Alfredo.
