Miniature Pecan Pies
- 8 oz. cream cheese, softened
- 1 c. margarine, softened
- 2 c. plus 2 Tbsp. flour
- dash of salt
- 3 eggs, beaten
- 3 Tbsp. melted margarine
- 3 tsp. vanilla
- 2 c. packed light brown sugar
- 1 1/4 c. chopped pecans
- Combine cream cheese and margarine in a large bowl.
- Cut in flour and salt with pastry blender until blended.
- Shape into 1-inch balls.
- Place into miniature muffin cups, pressing to cover bottom and side.
- Chill for 1 hour. Beat eggs in bowl until foamy. Add cooled, melted margarine and vanilla.
- Mix well. Add brown sugar and pecans.
- Mix well.
- Spoon into prepared muffin cups, filling 3/4 full.
- Bake at 325u0b0 for 25 minutes or until filling is set. Cool and remove from pans. Yields 48 servings.
