Pasta Salad
- 1 pkg. tri-color spiral pasta, cooked
- 1 lb. cooked shrimp, cut in halves
- 1 (2 oz.) can sliced black olives
- 1/2 c. sliced green olives with pimento
- 8 scallions (green onions), chopped
- 2 medium tomatoes, chopped
- 1 small yellow onion, chopped
- 1/2 c. Hanover chickpeas, drained
- 1 pkg. frozen broccoli (or fresh), steamed and chopped
- 1 Tbsp. salt
- 3 garlic cloves
- 2 Tbsp. olive oil
- 1 Tbsp. minced oregano
- lemon or lime juice of 2 or 3 lemons
- 1 Tbsp. cilantro, chopped
- 1 Tbsp. green hot pepper, chopped
- Prepare the garlic sauce:
- Crush the garlic, salt and cilantro with a mortar and pestle to a paste; mix in the lemon juice and olive oil.
