Ginger Chicken
- 1 chicken breast, sliced
- 1 tsp. potato flour
- 3 tsp. thin soy sauce
- 1/4 tsp. ginger powder
- 1 1/2 tsp. sugar
- 2 Tbsp. plus 1 tsp. oil
- 2 medium onions, sliced
- 5 oz. can sliced bamboo shoots
- 1/2 c. sliced button mushrooms
- 1/4 tsp. lemon grass
- 1/2 c. water
- 1/4 tsp. salt
- Marinate chicken for 1/2 hour in 1 teaspoon potato flour, 2 teaspoons thin soy sauce, 1/4 teaspoon ginger powder, 1/2 teaspoon sugar and 1 teaspoon oil.
- Stir-fry chicken with 1 tablespoon oil for 1 minute; remove from wok.
- Combine 1 tablespoon oil, onion, bamboo shoots and mushrooms in wok.
- Season with 1 teaspoon soy sauce, 1 teaspoon sugar, lemon grass, water and salt.
- Cover and cook over low heat for 3 to 5 minutes.
- Add chicken and thicken with potato flour.
