Ginger Chicken

  1. Marinate chicken for 1/2 hour in 1 teaspoon potato flour, 2 teaspoons thin soy sauce, 1/4 teaspoon ginger powder, 1/2 teaspoon sugar and 1 teaspoon oil.
  2. Stir-fry chicken with 1 tablespoon oil for 1 minute; remove from wok.
  3. Combine 1 tablespoon oil, onion, bamboo shoots and mushrooms in wok.
  4. Season with 1 teaspoon soy sauce, 1 teaspoon sugar, lemon grass, water and salt.
  5. Cover and cook over low heat for 3 to 5 minutes.
  6. Add chicken and thicken with potato flour.
