Artichoke Squares
- 2 (6 oz.) jar marinated artichoke hearts
- 1 small onion, finely chopped
- 1 clove garlic, minced or mashed
- 4 eggs
- 1/4 cup fine bread crumbs
- 1/4 tsp. salt
- 1/8 tsp. each: pepper, oregano, Tabasco sauce
- 1/2 lb. shredded sharp cheddar cheese
- 2 Tbsp. minced parsley
- Drain marinade from one jar of artichokes into frying pan. Chop all artichokes, set aside.
- Add onion and garlic to frying pan and saute till golden; about 5 minutes.
- In a bowl, beat eggs with fork, add bread crumbs, salt, pepper, oregano and
- Tabasco sauce. Stir in cheese, parsley, artichokes and onion mixture. Turn into a greased 7 x 11 inch baking dish.
- Bake at 350u0b0 for 30 minutes or until set.
- Let cool.
- May reheat in pan at 325u0b0 for 10 to 12 minutes to serve warm.
- Makes 3 dozen.
