Spicy Chicken With Beans
- 1 lb. ground raw chicken
- 1 c. chopped onion
- 2 cloves garlic, minced
- 1 Tbsp. cooking oil
- 1 tsp. ground cumin
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 (28 oz.) can tomatoes, cut up
- 1 (15 oz.) can tomato sauce
- 4 pickled jalapeno peppers, seeded and chopped (optional)
- 1 (15 oz.) can black beans, rinsed and drained
- 1 (15 oz.) can Great Northern beans, rinsed and drained
- 1/4 c. sour cream or shredded Cheddar cheese
- sliced green onion (optional)
- In large saucepan, cook chicken, onions and garlic in hot oil over medium heat, 8 to 10 minutes, or until chicken is no longer pink and onion is tender.
- Drain fat.
- Add cumin, salt and pepper; cook and stir for 1 minute more.
- Stir in undrained tomatoes, tomato sauce and, if desired, jalapeno peppers.
- Bring to boil. Reduce heat.
- Cover and simmer for 20 minutes, stirring occasionally.
- Add black beans and Great Northern beans; heat through.
