Apple Cottage Pudding

  1. Mix together flour, baking powder and salt.
  2. Set aside.
  3. Cream butter, vanilla, lemon rind and 1/2 cup sugar until well blended. Add egg and beat until fluffy.
  4. Add flour mixture to the creamed mixture and mix until a smooth batter forms.
  5. Pare, core and quarter the apples.
  6. Arrange in the bottom of an 8-inch quiche pan, shallow casserole or pie pan.
  7. Mix the 1/4 cup sugar with the cloves, nutmeg and allspice.
  8. Sprinkle half the mixture over apples in the pan.
  9. Pour batter over apples.
  10. Sprinkle with remaining spiced sugar.
  11. Bake at 375u0b0 for 40 to 45 minutes or until cake tester comes out clean.
  12. Serve hot with whipped cream and a sprinkling of cinnamon.
  13. Also can sprinkle with sifted confectioners sugar.
  14. Good as coffee cake the next day.
