Frog'S Eye Salad(May Be Prepared Fat Free)
- 1 c. sugar or 1/2 c. honey
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 3/4 c. pineapple juice (save juice from pineapple, add water to make 1 3/4 c.)
- 2 beaten eggs (or 2 beaten egg whites)
- 1 Tbsp. lemon juice
- 1 (1 lb.) pkg. Acini De Pepe (uncooked)
- 3 (11 oz.) cans Mandarin oranges, drained
- 2 (20 oz.) cans pineapple chunks, drained
- 1 pkg. Dream Whip, whipped
- 1 c. miniature marshmallows
- 1 c. flaked coconut
- Combine sugar, flour and salt.
- (If using honey, omit sugar from this first step and add the honey with pineapple juice.) Stir in pineapple juice and eggs.
- Cook, stirring constantly until thickened.
- Add lemon juice; cool to room temperature.
- Prepare Acini De Pepe; mix well and refrigerate overnight or at least 4 hours in airtight container.
- Add remaining ingredients and mix thoroughly.
- Refrigerate in airtight container until thoroughly chilled.
- Refrigerate leftovers.
- (Marshmallows and coconut can be optional.)
- Yields 25 servings.
