Spinach-Stuffed Potatoes(Reduced Fat)
- 2 small baking potatoes
- 1/2 (10 oz.) pkg. frozen chopped spinach
- 1/4 c. Parmesan cheese
- 2 Tbsp. nonfat sour cream
- 2 Tbsp. diced pimento
- 1 Tbsp. reduced calorie margarine
- 1 Tbsp. chopped green onions
- 1 clove garlic, crushed
- dash of red pepper
- Prick potatoes several times and bake at 400u0b0 for 45 minutes until soft.
- Cool slightly; cut potatoes in half lengthwise and scoop out potato pulp leaving 1/4 inch shells.
- Place pulp in bowl, mash until smooth.
- Add spinach, 3 tablespoons cheese and next 6 ingredients.
- Stir.
- Fill potato shells with spinach mix. Sprinkle with remaining cheese.
- Place on baking dish.
- Bake at 350u0b0 for 30 minutes.
- Yields 4 servings.
