Spinach-Stuffed Potatoes(Reduced Fat)

  1. Prick potatoes several times and bake at 400u0b0 for 45 minutes until soft.
  2. Cool slightly; cut potatoes in half lengthwise and scoop out potato pulp leaving 1/4 inch shells.
  3. Place pulp in bowl, mash until smooth.
  4. Add spinach, 3 tablespoons cheese and next 6 ingredients.
  5. Stir.
  6. Fill potato shells with spinach mix. Sprinkle with remaining cheese.
  7. Place on baking dish.
  8. Bake at 350u0b0 for 30 minutes.
  9. Yields 4 servings.
