Cohasset Seafood Supreme
- 3/4 lb. butter
- 3 Tbsp. flour
- 3 (14 oz.) cans evaporated milk
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. capers
- 6 Tbsp. grated Parmesan cheese
- 1 tsp. paprika or more
- 1 lb. shrimp, cooked and cleaned
- 2 1/2 c. lobster meat, cooked and flaked
- 1 pt. bay scallops or cut sea scallops, cooked
- 1 lb. flounder filet, cooked and flaked
- 1/2 lb. crabmeat, cooked and flaked
- 2 Tbsp. sherry
- 1/2 c. dry bread crumbs
- dash of paprika for garnish
- When we lived in this small fishing village, seafood was an inexpensive item, served several times a week and dressed up like this for company.
