Refined Sugar Free Breakfast Cookies (Gf, Df, Egg Free)
- 3 medium ripe bananas, mashed
- 1/3 cup applesauce
- 2 cups oats
- 1/4 cup flax seed meal or 1/4 cup chia seed meal
- 1/4 cup almond milk or 1/4 cup coconut milk
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- 1 tablespoon powdered maca
- 1 tablespoon grassfed beef gelatin powder
- 1/3 cup dark chocolate chips (mini work great)
- Preheat oven to 350u0b0 F.
- Mix dry ingredients and wet ingredients in two separate bowls. Add the dry to the wet and mix well.
- Place by 1/4 cupfuls on a parchment paper lined baking sheet.
- Bake for 15-20 minutes. Will be moist, but not fall apart or too soft. Let cool on baking rack. Keep in covered container in fridge.
