Seafood Stuffed Zucchini
- 1 lb. cooked flaked fish or crabmeat
- 3 cloves crushed garlic
- 1 c. seasoned dry bread crumbs
- 4 medium zucchini
- 3/4 c. tomato puree
- 1/2 tsp. hot pepper sauce
- 2/3 c. olive oil
- 1/2 tsp. pepper
- 1 c. chopped parsley
- 1/4 c. chopped onion
- 2/3 c. chicken broth
- 1 tsp. salt
- Cook garlic int/2
- cup
- olive oil for 2 to 3 minutes. Add bread crumbs
- and stir to brown.
- Remove from heat and add parsley, pepper and
- seafood.
- Settside.tut squash in half lengthwise.
- Scoop out center, chop and saute in 1/2 cup olive oil and onion.tdd

- and simmer for 15 minutes.
- Pour
- into
- rectangulartakingtish.
- Stuff
- fish mixture into
- center
- of
- zucchinis,
- arrange in tomato sauce. Bake at 375u0b0 until tender, about 30 minutes.
- Serves 6 to 8.
