Pork Broccoli Stir-Fry
- 1 lb. pork, thinly sliced
- 1 1/2 Tbsp vegetable oil
- 1 c. broccoli florets, sliced
- 1/2 c. green pepper, thinly sliced
- 3 cloves garlic, minced
- 1 c. fresh mushroom, sliced
- 2 Tbsp. cornstarch
- 1 c. chicken broth
- 4 Tbsp. soy sauce
- In a large skillet stir-fry pork, until no longer pink. Remove pork from skillet, and keep in warm place.
- In the same skillet, stir-fry broccoli about 2 to 3 minutes.
- Add green pepper and garlic, cook for 2 minutes.
- Stir in the mushrooms, cook 2 minutes longer.
- In a small bowl combine cornstarch, chicken broth and soy sauce, until smooth, and stir into skillet.
- Bring to a boil, cook and stir constantly until thickened.
- Return pork to the skillet, heat through.
- Serve over rice or noodles.
