Microwave Enchilada Casserole
- 1 lb. ground beef
- 1 (16 oz.) can refried beans
- 1 (1 3/8 oz.) pkg. chili seasoning mix
- 1 (10 oz.) pkg. flour tortillas
- 1 (15 oz.) can tomato sauce
- 2 c. (8 oz.) shredded Cheddar cheese
- 1 c. water
- Place beef in 2-quart glass measure or bowl; cover with plastic wrap.
- Cook on High 3 minutes.
- Stir in beans, seasonings mix and 1 cup water.
- Cook on High 5 minutes, stirring once.
- Pour sauce into pie plate.
- Dip both sides of tortillas in sauce. Layer beef mixture and tortillas in microwave-safe 13 x 9 x 2-inch baking dish, cutting tortillas as necessary to fit.
- Sprinkle cheese over all.
- Cover tightly with plastic wrap.
- Cook on Medium-high 10 minutes, turning dish once.
- Let stand 10 minutes before serving.
- Garnish with shredded lettuce, chopped tomato and black olives, if desired.
