Microwave Enchilada Casserole

  1. Place beef in 2-quart glass measure or bowl; cover with plastic wrap.
  2. Cook on High 3 minutes.
  3. Stir in beans, seasonings mix and 1 cup water.
  4. Cook on High 5 minutes, stirring once.
  5. Pour sauce into pie plate.
  6. Dip both sides of tortillas in sauce. Layer beef mixture and tortillas in microwave-safe 13 x 9 x 2-inch baking dish, cutting tortillas as necessary to fit.
  7. Sprinkle cheese over all.
  8. Cover tightly with plastic wrap.
  9. Cook on Medium-high 10 minutes, turning dish once.
  10. Let stand 10 minutes before serving.
  11. Garnish with shredded lettuce, chopped tomato and black olives, if desired.
