Fruit Cake Cookies
- 2 c. brown sugar, packed
- 1 c. margarine
- 8 eggs, separated
- 6 tsp. soda, dissolved in 6 Tbsp. buttermilk
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 6 c. all-purpose flour
- 1 c. orange juice
- 2 lb. candied cherries
- 1 lb. dates
- 1 lb. candied mixed fruit
- 1 1/2 lb. whole white raisins
- 6 c. shelled nuts (pecans or walnuts)
- Cut up candied fruits, dates and nuts.
- Use white raisins whole.
- Cream butter and sugar.
- Add yolks of eggs.
- Sift together 4 cups flour with cinnamon and nutmeg.
- Add this to creamed mixture alternately with fruit juice and dissolved soda in buttermilk.
- Use the remaining 2 cups of flour to dredge the fruit and nuts.
- Pour batter over fruit mixture and mix.
- Beat egg whites and fold in last.
- Drop by teaspoonful on greased cookie sheet and bake for 25 to 30 minutes at 275u0b0.
