Sugar-Free Chocolate Chip Cookies
- 1 c. (2 sticks) diet oleo (room temperature)
- 1/4 c. sugar
- 1/4 c. brown sugar Twin (or any sugar substitute)
- 3 large egg whites (room temperature)
- 1 Tbsp. vanilla extract
- 2 c. white flour (unbleached all-purpose)
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 c. water (room temperature)
- 1/2 c. mini semi-sweet chocolate chips
- Preheat oven to 375u0b0. Cream oleo, sugar and sugar Twin at medium speed until light and fluffy. Add egg whites and vanilla. Beat on medium for 1 minute. Sift together flour, soda and salt. Add water to creamed mixture along with the flour mixture; mix for 1 minute until smooth. Add chips to dough and mix lightly. Drop by tablespoonfuls onto cookie sheets that have been lined with foil or are nonstick.
- Press down with fingers dipped in cold water; form circles, about 2 inches in size. Bake 12 to 15 minutes or until brown. Yields 44 cookies.
