Strawberry Pie
- 1 baked (9-inch) pastry shell
- 4 c. strawberries, hulled and washed, well drained
- 3/4 c. water
- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- few drops red food coloring
- whipped cream for topping
- Crush 1 cup berries in small saucepan.
- Add water and bring to boil.
- Simmer 3 minutes.
- Strain juice from cooked berries.
- Add water if needed to make 1 cup; reserve.
- Combine sugar, cornstarch and salt in same saucepan and reserved juice stirring until smooth.
- Bring to boil, stirring constantly.
- Cook about 3 minutes until thick and clear.
- Add food coloring.
- Remove from heat and cool slightly.
- Pour over berries which have been arranged in pastry shell.
- Serve with whipped cream.
- Be sure to coat each berries with glaze.
