Pasta Salad - Lu'S
- 3 Tbsp. red wine vinegar
- 1 tsp. dried basil
- 1 tsp. Dijon mustard
- 1/2 tsp. oregano
- 1/4 tsp. salt
- 1/8 tsp. coarsely chopped green pepper
- 1 clove garlic, minced or pressed
- 1/2 c. olive oil or salad oil
- 1/4 c. finely chopped cilantro (parsley)
- 1 1/2 c. dry pasta, cooked (about 3 c.)
- 1 small red pepper, chopped
- 2 Tbsp. Parmesan cheese
- 2 Tbsp. finely cubed Cheddar cheese
- 2 or 3 finely chopped green onions
- 1 small can sliced black olives
- 2 average size Roma tomatoes, chopped
- In a large bowl, mix the first 7 ingredients.
- Using whisk or fork, gradually beat in oil until well combined.
