Whole Wheat Banana Bread
- 1/2 c. butter
- 3/4 c. brown sugar
- 1 egg
- 1 c. unsifted whole wheat flour
- 1/2 c. unsifted unbleached white flour
- 1 tsp. baking soda
- 3/4 tsp. salt
- 1 1/4 c. mashed ripe bananas (2 large or 3 small)
- 1/4 c. yogurt
- Preheat oven to 350u0b0.
- Cream butter and sugar together until light and creamy.
- Beat in egg.
- Sift together flour, baking soda and salt.
- Combine the bananas and yogurt stirring just enough to mix.
- Add dry ingredients alternately with banana mixture to butter mixture stirring just enough to combine well.
- Turn into 9 x 5-inch oiled loaf pan.
- Bake 50 to 60 minutes or until done. Cool in pan 10 minutes.
- Remove from pan and finish cooling on a rack.
- Yields 1 loaf.
