Rainy Day S'Mores
- 3/4 c. butter
- 2/3 c. evaporated milk
- 1 (12 oz.) pkg. milk chocolate morsels
- 1 tsp. vanilla extract
- 4 c. graham cracker pieces
- 1/2 c. mini marshmallows to sprinkle on top
- Place butter, evaporated milk, marshmallows, and morsels in the top of a double boiler.
- Heat on medium heat, stirring occasionally, until all ingredients are melted. When mixture is smooth, stir in the vanilla extract.
- Place the small pieces of broken graham crackers in a large bowl.
- Stir in marshmallow mixture until each piece of cracker is well coated.
- Put mixture in a 13x9 inch pan that has been sprayed with cooking spray. Sprinkle the top with remaining marshmallows.
- Allow s'mores to set for about 30 minutes before cutting.
- Use a warm knife for easier cutting.
