Sugar Crusted Raisin Bars 1969
- 3/4 cup raisins
- 1 large egg
- 2/3 cup brown sugar
- 1/3 cup melted margarine, solid type
- 1 1/8 cups pastry flour or 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
- Heat oven 350 degrees.
- Grease 8 inch baking pan and line if desired with buttered parchment.
- Rinse raisins well, and then drain.
- Beat egg , stir in the sugar, vanilla, and melted margarine.
- Add sifted dry ingredients and then stir in the raisins.
- Spread into prepared pan.
- Mix the sugar and cinnamon together, and sprinkle over batter evenly.
- Bake for 22- to 25 minutes in moderate oven, until tester comes away clean.
- Cool in pan.
- Cut into 24 bars.
