Cauliflower Supreme
- 1 head cauliflower
- 1 10-oz. pkg. tiny peas
- 1/2 c. sliced pimiento, optional
- 1 c. diced ham, optional
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 c. water or milk
- 1 c. grated cheese
- 1/4 tsp. salt
- dash pepper
- Remove leaves and core from cauliflower and steam the whole head until tender.
- Make a sauce by melting the butter, and adding the flour to blend.
- Add the milk and cook over low heat until thick, stirring constantly.
- Add salt and pepper.
- Add the pimiento, ham, or both and heat through.
- Add the cheese and stir until melted.
- To serve, place the steamed cauliflower in a bowl or dish and pour the sauce over it.
- This makes a very nice centerpiece dish.
- Be sure the cauliflower is not over cooked so it will stay together as a whole center.
