Hurry-Up Chicken Stir-Fry
- 2 Tbsp. vegetable oil, divided
- 1 c. broccoli flowerets
- 1 c. cauliflower flowerets
- 1 large carrot, cut into 2-inch strips
- 3 green onions, sliced
- 1 clove garlic, minced
- 3 chicken breast halves, skinned, boned and cut into 1-inch pieces
- 1/2 c. Italian salad dressing
- 1 Tbsp. soy sauce
- 1/2 tsp. ground ginger
- hot cooked rice
- Pour 1 tablespoon oil into wok or large skillet, coating bottom and sides; heat to medium high (325u0b0) for 2 minutes.
- Add broccoli and next 4 ingredients; stir-fry 4 minutes.
- Remove vegetables from skillet.
- Pour remaining 1 tablespoon oil into wok.
- Add chicken; stir-fry 4 minutes or until tender.
- Return vegetables to wok; stir in salad dressing, soy sauce and ginger. Serve over rice.
- Yields 3 servings.
