Dove Load Burritos
- 36 dove breast, boned and diced
- 1/2 lb. butter
- 1 large purple onion, diced
- lemon pepper to taste
- 1-1/2 lbs. potatoes, diced
- garlic salt to taste
- 1 (16 oz.) jar salsa
- 4 oz. can chili peppers, diced
- 12 large flour tortillas
- 1 lb. monterey jack cheese, shredded
- green taco sauce
- In large skillet over medium heat, cook dove meat and onion in 1/2 the butter; season with lemon pepper.
- Cook for 10 minutes; set aside.
- In same skillet melt remaining butter and fry potatoes adding lemon pepper
- and garlic salt to taste.
- Place meat in with potatoes; adding salsa and chili peppers.
- Simmer 15 minutes; stirring frequently.
- Spoon into warm tortillas; cover with cheese and green taco sauce.
- Fold and serve.
