Old Faithful
- 1 cup uncle ben's converted white rice, uncooked
- 1 (1 1/2 ounce) package Knorr vegetable soup mix
- 1 (14 ounce) can low sodium chicken broth or (14 ounce) can vegetable broth
- 4 (4 -6 ounce) pork chops
- 1 medium yellow onions or 1 medium red onion, sliced into rings
- 1 medium green pepper, sliced into rings
- 1 (14 ounce) can diced tomatoes
- Preheat oven to 350.
- Drain tomatoes, reserving enough of the liquid to bring the broth to 2 cups.
- Add rice, soup mix and broth to bottom of 12x12 baking dish, stir to combine and evenly distribute in the baking dish.
- Place pork chops on top of rice mixture.
- Top each pork chop with a ring of onion and a ring of green pepper. Fill each ring with diced tomatoes.
- Cover and bake for 65-70 minutes or until meat is cooked through and liquid absorbed into the rice.
