Rice And Ham Rolls For 8
- 6 c. cooked rice (wild rice mix)
- 1 c. green onion
- 1/4 c. fresh parsley
- 8 ham slices, long (6 1/2 x 4 1/2-inch)
- 1/4 lb. fresh mushrooms, finely chopped
- 1/4 c. butter
- 2 c. chopped chicken
- 1 small pkg. cooked frozen shrimp
- 1/4 c. flour
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 c. chicken broth
- 1 c. half and half
- 4 oz. Cheddar cheese
- 1/2 c. dry white wine
- Mix rice with 1/2 cup green onion and parsley.tombine rice with chicken and shrimp.
- Set aside.
- Saute in butter the mushrooms
- and
- other
- 1/2 cup of onion.
- Stir in flour, salt, pepper,
- chicken broth, half and half and cheese.
- After sauce has thickened, add wine slowly.
- Combine 1 cup of sauce with 2 cups oftice mixture.
- Place about 2 tablespoons down center of
- ham slices.
- Place remaining rice in bottom of buttered 13 x
- 9
- x 2-inch
- pan.
- Roll up ham and place seam side down on riceted. Spoon
- remaining
- sauce over rolls.
- Cover tightly and
- chill overnight.take
