Perfect Peanut Butter Cookies
- 1/2 c. butter or margarine
- 1/2 c. creamy or chunky peanut butter
- 1/2 c. granulated sugar
- 1/2 c. brown sugar, firmly packed
- 1 large egg
- 3/4 tsp. vanilla extract
- 1 1/4 c. all-purpose flour
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- Heat
- oven to 375u0b0.
- In large bowl, with electric mixer on medium
- speed beat butter, peanut butter, granulated sugar and half
- of the brown sugar until light and fluffy.
- Add eggs and vanilla and beat in.
- In small bowl, combine flour, baking soda and
- salt.
- With
- mixer
- at
- low
- speed beat into butter mixture until blended.
- Sprinkle remaining brown sugar on top of
- dough and
- fold
- in
- lightly
- so sugar granules are still visible.
- Roll into
- balls
- and
- press out with fork to about 1/4-inch thick. Bake 5 to 8 minutes.
- Makes about 3 1/2 dozen cookies, 73 calories a cookie.
