Pfeffernusse(German)
- 2 c. brown sugar, firmly packed (1 lb.)
- 4 eggs
- 5 c. sifted flour
- 1/2 tsp. baking soda
- 1 tsp. powdered cloves
- 1 tsp. powdered nutmeg
- 1/2 tsp. powdered cinnamon
- 1/4 tsp. black pepper
- 2 tsp. crushed cardamon seed
- candied, finely chopped orange peel (very small amount, if desired; this is usually not used)
- Stir sugar gradually into slightly beaten eggs.
- Add flour, soda and spices, sifted together.
- Mix thoroughly and let stand overnight in a cool place. Roll with hands into balls the size of marbles.
- Place on greased baking sheet and bake in oven at 350u0b0 for 15 minutes. Cool and frost with confectioners sugar icing. When frosting has set, store in tightly covered container to ripen for several weeks.
