Burgers Florentine
- 10 oz. chopped spinach, frozen
- 1 Tbsp. snipped parsley
- 1/3 c. bread crumbs
- 2 lb. ground beef
- 2 Tbsp. green pepper, chopped
- 1/4 c. dry red wine
- 2 Tbsp. chopped onions
- 1 tsp. salt
- 1/2 c. small curd cottage cheese
- 1 beaten egg
- Cook spinach.
- Drain.
- Combine spinach, cottage cheese, parsley and dash of salt; mix well and set aside.
- Combine egg, crumbs and teaspoon salt; add beef and mix well.
- On wax paper, make 16 thin patties, 3-inches in diameter.
- Place 2 tablespoons spinach mixture on each of 8 patties.
- Top with remaining patties and seal edges.
- Brown in skillet; drain and set aside.
- In same skillet, combine remaining ingredients.
- Return burgers to skillet and simmer 20 minutes.
