Burgers Florentine

  1. Cook spinach.
  2. Drain.
  3. Combine spinach, cottage cheese, parsley and dash of salt; mix well and set aside.
  4. Combine egg, crumbs and teaspoon salt; add beef and mix well.
  5. On wax paper, make 16 thin patties, 3-inches in diameter.
  6. Place 2 tablespoons spinach mixture on each of 8 patties.
  7. Top with remaining patties and seal edges.
  8. Brown in skillet; drain and set aside.
  9. In same skillet, combine remaining ingredients.
  10. Return burgers to skillet and simmer 20 minutes.
