Pineapple Raisin Nut Bread

  1. In a large mixing bowl, beat the sugars, oil and eggs until smooth.
  2. Stir in pineapple and extract.
  3. Combine the flour, cinnamon, baking soda, baking powder, salt and cloves; stir into egg mixture just until moistened.
  4. Fold in pecans and raisins.
  5. Spoon into two greased 8x4x2-inch loaf pans.
  6. Bake at 325 for 50-55 minute or until a toothpick inserted near the center comes out clean.
  7. Cool for 10 minute before removing from pans to wire racks.
