Marinated Oysters
- 2 qt. oysters
- 1 1/2 c. vegetable oil
- 1 c. fresh lemon juice
- 1/2 Tbsp. lemon pepper
- 1 tsp. garlic salt
- 1 1/2 cloves garlic, minced
- 2 tsp. dill weed
- 5 drops Tabasco sauce
- 1 Tbsp. salt
- 1/2 tsp. black pepper
- 2 green onions, chopped
- fresh bunch parsley, tops washed and snipped from stems
- soda crackers
- Simmer oysters in large pot in own juices until edges curl but oysters are still very plump, approximately 10 minutes.
- Drain in colander and cool.
- Check for shell pieces, but do not rinse. Place oysters in glass dish in single layer.
- Mix all ingredients except crackers.
- Pour over oysters.
- Refrigerate 12 to 24 hours covered with plastic wrap.
- Turn oysters at least twice.
